Please see the document template attached to issue 5102

Using the Word Template create a new document.

All the fields are now small grey boxes. I.e. all the text has been removed. 
(See title page.)
Double click a field takes you to the Edit Field Dialog, but there is no way 
of entering any text !

Yes, that is a generally desired behaviour in OpenOffice. When
creating a new document from a template, all documentInfo fields are
empty. They are not filled out by the template. This is not insisted
by the filter, it is a [Star|Open]Office feature.

MRU->OS: We should also make the Document Properties write-accessible
in the Edit/Field dialogues.

I don't think it's a good idea. Additionally I don't like the
currenctly implemented behaviour that loading template files creates
new documents automatically. In earlier versions the templates were
opened to edit them. To create new documents out of the template the
Templates & Documents dialog should be used.

OpenOffice.org Issue Tracker - Feedback Request.

been updated within the last 4 years. Please consider re-testing with one of the
latest versions of OOo, as the problem(s) may have already been addressed.

To grep the issues easier via "requirements" I put the issues currently lying on
my owner to the owner "requirements".
